Veggie Detox Soup

The past few days have had me feeling exhausted. I haven't been busy per se, but I can feel a bit of a cold coming on. I don't know if it was the Christmas madness or the stress I've been feeling lately, or both of those things combined, but I'm feeling a tad run down. I'm not really one to ever get sick, even throughout winter, but I wanted to get on top of this before it beats me down with a stick and leaves me to be even less productive than I usually am. Cue the detox soup.


This laksa-like soup is packed full of vitamins A, C, and K, which is exactly what's needed to fight off any unwanted colds. Serve hot, and let it nourish your body like no other.



Veggie Detox Soup
Serves 2

Ingredients
1 tbsp olive oil
1/2 white onion, finely sliced
1 small sweet potato, diced into bite-sized cubes
1 small zucchini, sliced
Big handful of kale, torn into small pieces
Handful baby spinach
1/2 cup pre-cooked lentils
1 tsp garlic
1/2 tsp ginger
1/4 - 1/2 tsp dried chilli flakes
4 cups vegetable stock
1/4 - 1/2 cup coconut milk

Heat the oil in a pot, add the onion; cook on a low heat until softened, but not too browned. Add the sweet potato and zucchini and stir. Add the garlic, ginger, and chilli flakes and stir again before adding the vegetable stock. Turn the heat to medium-high and let simmer for 20 minutes, or until the sweet potato is soft. Add the kale, baby spinach, lentils, and coconut milk, and stir once more before serving.
