Perfect combinations - peanut butter and banana, avocado and tomato, pancakes and maple syrup, chocolate and coconut. Some things are just meant to be together. That's where these cookies came into action. I had bits and pieces to throw together, and I was determined to make something delicious, and not too unhealthy either. Perfect combination cookies? (However, I am yet to make peanut butter and banana cookies, which would be my perfect combination). Well, you can decide.
Chocolate Coconut Quinoa Cookies
Yields 18 cookies
Ingredients
1 1/4 cup almond meal (ground almonds)
1 1/4 cup quinoa flakes
1/4 cup chia seeds
1/2 tsp baking powder
Pinch of sea salt
1/4 cup melted coconut oil
1/4 - 1/2 cup agave (depending how sweet you want the cookies)
2 tbsp chocolate coconut butter (I used Cocopure)
Preheat oven to 175 degrees Celsius line two trays with baking paper. Combine dry ingredients in a large bowl and mix, making sure there are no lumps of almond meal. Add the coconut oil, agave, and chocolate coconut butter, and mix well. Roll into tablespoon-sized balls and place onto the trays. Bake for 10 minutes; let cool on the trays before transferring to a wire rack to cool completely.
